content in this French bean. They range from creamy white to light
green.
Its versatile flavor compliments lamb, as well as fish and
chicken.
RECIPE
FLAGEOLET BEANS AND SCALLIONS
1 lb flageolets*, cooked and drained
4 scallions chopped including tops
2 cloves garlic, peeled and pressed
1/2 c fresh lemon juice
1/2 c olive oil
Sea salt* and freshly ground black
pepper*
Mix everything but beans together to make a
dressing.
Pour over beans and sprinkle with parsley.
Chill several hours
before serving.
