Flageolet beans

Delicate fine texture and low starch content in this French bean.  They range from creamy white to light green.  

Its versatile flavor compliments lamb, as well as fish and chicken.




1 lb flageolets*, cooked and drained
4 scallions chopped including tops
2 cloves garlic, peeled and pressed
1/2 c fresh lemon juice
1/2 c olive oil
Sea salt* and freshly ground black pepper*

Mix everything but beans together to make a dressing. 

Pour over beans and sprinkle with parsley

Chill several hours before serving.
