Jacob's
cattle is
kidney-shaped bean of ancient but unknown origins. It has a striking
decoration of deep-maroon speckles on a white background.
Jacob's
Cattle beans are also known as "Trout Beans" were believed to
have found their way to New England by being brought from Germany during
colonial times.
It is
an heirloom bean which means the bean was handed down within a small
community for several generations.
After cooking, the patterns fade but
are still distinct.
Jacobs cattle has an earthy flavor with a slight
sweetness and mealy texture.
Jacob's Cattle beans can be substituted for
any bean in the haricot family.
RECIPE
JACOB’S BEAN LOAF
3 c. cooked Jacob’s Cattle Beans *
1/2 c diced bacon
1 egg
1 t sea salt*
1/8 t pepper*
1T minced parsley
2 T. Minced green pepper
1/4 c milk
Topping/Sauce:
1 T. butter
2 T unbleached all purpose flour
3 T chopped onion
1 c milk
1 c cooked tomatoes
Using food processor, mash cooked beans.
Add
remaining ingredients in top list and shape into a meat loaf.
Place in
greased loaf pan.
Saute` onion in butter.
Add
flour and milk to make a white sauce.
Squeeze cooked tomatoes into sauce
and cook til combined.
Pour over loaf and Bake at 350º F for 40 min.
