Soybeans are one of the most versatile
beans available.
Used in Oriental recipes and many vegan recipes as
the main source of protein, soybeans can be a main staple in your diet.
They are basis for tofu, soymilk, tvp and a myriad of other products.
RECIPE
SOYBEAN HAMBURGER CASSEROLE
2 T olive oil
1/2 c onion chopped
1 c celery chopped
1/4 c green pepper chopped
1/2 c hamburger
1 t sea salt*
1/8 t pepper*
2 1/2 c cooked soybeans*
1/4 c stewed tomatoes
1 T beef bouillon*
1 c. hot water
2 c cooked long grain rice*
1/2 c grated cheese
Saute in oil the onions, celery and green pepper.
Add meat and brown.
Stir in remaining ingredients except cheese.
Heat and simmer few
minutes.
Place in greased casserole and bake at 350º F for 45 min.
Remove from oven and top with cheese.
Return to oven and heat til cheese melts.
