Dried
and split form of garden peas.
HEARTY SPLIT PEA SOUP
1 lb split peas *
2 T canola oil
2 med onion, chopped
2 ribs celery, sliced
1 ham hock
2 bay leaves
8 c chicken stock
sea salt* & pepper*
to taste
Wash and rinse peas.
Cover and let sit overnight.
Rinse and drain. In
soup pot, saute onion and celery in oil til onion transparent.
Add peas,
ham and bay leaf. Add stock.
Bring to boil and reduce heat. Simmer til
peas are tender, about 30 min.
Remove hocks from soup and remove meat from hocks.
Return to soup and
serve.
OPTION: Remove peas to blender and puree in batches.
Return to pot and
keep warm til serve.
