Yellow-eye beans are small, off-white beans with a
characteristic yellowish-brown marking.
Popular in Maine, this variety
has a mild flavor that is similar to that of Navy or Great Northern beans,
but is considered superior in taste.
RECIPE
YELLOW EYED WILD RICE SALAD:
2 c cooked wild rice*
1 3/4 c cooked, drained yellow eyed beans*
1
c. chopped zucchini
1/2 c chopped red bell pepper
1/2 c chopped green pepper
1/4 c. chopped fresh parsley
1 c chopped tomato
1/2 c chopped green onions
Dressing:
6 T lemon juice
2 T Dijon Mustard
2 T Red wine Vinegar
1 large garlic clove, minced
1 t sea salt*
1/2 t pepper*
In large bowl, combine rice, vegetables and parsley.
In small bowl, mix
remaining ingredients and blend well.
Pour over salad and toss.
Let
marinate in refrigerator 1 hour and serve.
